Results are consistently smooth, cleaning the machine is simple, and the brushed metal styling is just sensational.

This ice cream maker is a lot simpler to use than the big 4-quart machines. The 2 quart capability gave it a efficiency rating above all of the small machines which employ a re-freezable bowl program like this one.

Cuisinart ICE-45 Mix It In Soft Serve 1-1/2-Quart Ice-Cream Maker.

We kept  our freezer bowls in the deep freeze when not in use for these ice cream maker reviews so that we could make ice cream fairly quickly. This is a great machine! If you are patient and don’t expect it to make it in a few minutes, you’ll be very happy. We made piña colada ice cream, raspberry sorbet and vanilla soft serve. All turned out great! We kept the bowl in the freezer full time and it works perfectly. The batches take bout 20 minutes, but that’s perfectly fine.

It’s probably best to mix up your soft serve mix at least an hour in advance and put it in the coldest part of your fridge or (as another reviewer suggested) in the freezer for 10-15 minutes to get it as cold as possible without prematurely freezing it.

The Ice 45 will give you about 10 – 12 servings before it needs refreezing. Clean is a snap since all the parts can be easily removed and cleaned.

Recommendations: Be patient and don’t expect the first couple of runs to be perfect. It takes practice to get the hang of how long you need to run it and it will vary based on what you make in it. Make sure your ingredients are very cold before putting them into the frozen bowl – the liquid that hits the bowl first will freeze on contact. Mix my ingredients and put them into the freezer for about a half hour, take it out of the freezer, mix well and then add them into the ice cream machine. Also dispense into chilled bowls instead of room temperature bowls.

Gelato is a dense mixture with lower fat than ice cream and no added air, which is more rich and flavorful. Cleanup is easy with the stainless steel bowl and the mixing paddle effectively mixes ingredients from top to bottom for perfect consistency.

Self-Refrigerated units have a self refrigerating system with compressors. The self refrigerated units don’t require the ice cream container to be cooled using another freezer. The units own refrigerator system provides the cooling for the ice-cream ingredients. This type of ice-cream maker is very fast and can make ice cream in 20 minutes. However, they are more expensive and are also larger in size than the normal ones. Several batches of ice cream can also be made one after the other.

Cuisinart, seems to insist that the products bearing their name maintain a level of quality that reflects well on their reputation, regardless of where the products are made. When we did these ice cream maker reviews we saw immediately that this model, is the result of good design and engineering and although made in the far east  is surprisingly sturdy and simple to use.

This Ice Cream maker is perfect for making small amounts of delicious ice cream quickly. Its the perfect first time ice cream maker to buy. We used it for ice cream, frozen yogurt and sorbet all with excellent results. It’s even quicker than advertised and most of the batches took about 15 minutes.

The instructions are easy to understand and logically written. We liked the electrical cord stowage under the unit, so that it’s easy to store.

This is the quietest ice cream machine yet. You can hear a pin drop and while we did this ice cream maker review, the rest of the crew comfortably watched TV in an adjacent room without having to adjust the volume at all.

One nice thing about this model is that, once the frozen desert is firmed up so that it all clings to the beater inside, the design of the beater helps you lift it out and into a container with very little left inside the machine to scoop out. You may want to put the ice cream in the freezer right after making it for a half hour to an hour, because it tends to melt quite fast. But even if you’re anxious to just eat it without further chilling, you won’t be disappointed with the results.

We loved the very creamy, soft, but solid texture. We put some in the freezer overnight and it was rock solid, but once defrosted it still had a creamy taste.

Ice Cream Desserts Italian Style.

Gelato The Italian Word For Ice Cream.

Italians use the word gelato to mean a sweet treat that is served frozen. Use of the word sorbetto is a common affectation in the United States.  Gelato is the Italian form of ice cream. While it is very similar to American ice cream, there are a few differences. Italian gelato ice cream is also much denser than commercial ice cream because it has much less air whipped into it.  Even the colors are extremely vibrant and make the ice cream dessert a treat for the eye as well as the stomach.

In homemade gelato the sugar content, as in traditional ice cream, is balanced with the water content to act as an anti-freeze to prevent it from freezing solid.

Gelato requires a stabilizing base and egg yolks are used in yellow custard-based gelato flavors, including  zabaione and crème caramel. Non-fat milk solids are also added to gelato to stabilize the base so that making gelato is quite similar to making ice cream. The mixture uses a hot process first so that the sugars dissolve. Then there is pasteurization using white heat to 85 degrees centigrade. The hot process to make chocolate gelato is essentially the same for conventional ice cream, and depending on recipes, it is usually flavored with cocoa butter and cocoa powder.

Gelato is typically frozen very quickly in individual small batches while the conventional ice cream is frozen with a continuous assembly line freezer. Air is incorporated during the freezing process making the mix lighter. The added air is called overrun normally 20-35% resulting in a more expensive, denser product and with more intense flavors…

Gelato is typically first flavored with cocoa, fresh fruit purees, and/or nut pastes. If  other ingredients such as chocolate flakes, nuts, small confections, cookies, or biscuits are added, after the gelato is frozen. Gelato made with fresh fruit, sugar, and water and without dairy ingredients is sorbet or sorbetto.  Sorbetto is a common affectation in the United States of America.

Historically speaking, milk-based gelato was common in Northern Italy while the fruit-and-water based sorbetto was common in the warmer climes of Southern Italy.

Gelato is not homogenized as in other forms of ice cream. This means that it melts far quicker than regular ice cream.

The origins of Italian ice cream are obscure. One story is that Marco Polo brought back ice cream from his adventures to China. There is however some doubt whether China had any ice cream at all during those times. It is generally assumed that ancient Persia and China  were among the first nations to develop desserts made from fruits in the form of shaved ice or snow.  In fact this discovery could have taken place simultaneously in many cultures.

Although the role of Marco Polo in introducing ice cream to the Italians is unclear one thing that can be said for sure is that the Italians had a huge role to play in introducing the rest of Europe to ice cream desserts.
